Substances

  • 2 wholemeal Mountain Bread wrap, chopped into “chip” sized items (50 grams)
  • 2 cups hummus (500 grams)
  • 1/2 cup kalamata olives, pitted & chopped (90 grams)
  • 1/2 cup semi-dried tomatoes, chopped (120 grams)
  • 3/4 cup reduced-fat feta (180 grams)
  • 100 gram tinned chickpeas, rinsed & tired
  • 1 punnet cherry tomatoes, chopped (250 grams)
  • 1 Lebanese cucumber, part sliced, part chopped (200 grams)
  • 1 lemon, sliced (100 grams)
  • 4 medium carrot, peeled & lower into sticks (280 grams)
  • Salt and pepper
  • 1 tsp additional virgin olive oil (5 mls)
  • 1 tbsp non-compulsory Dukkah (a Center Jap seed & spice combine) (15 grams)

Directions

  1. Preheat the oven to 180C and line a baking tray with baking paper.

  2. Position the chopped mountain bread in a fair layer at the baking tray and bake
    for 1-2 mins to toast the wrap, turning part means via. Take away from the
    oven and put aside to permit it to chill.

  3. Get ready the serving board, via protecting 80% with baking paper.

  4. Unfold the baking paper lightly with the hummus, then best with the olives and
    semi dried tomatoes.

  5. Dice the feta, booking a small quantity for garnishing, then sprinkle the feta
    cubes over the board.

  6. Sprinkle over the chickpeas, cherry tomatoes and chopped cucumber.

  7. Prepare lemon, carrot and cucumber slices across the board.

  8. Season with salt and pepper, garnish with (non-compulsory) Dukkah, closing feta,
    crumbled excessive, then drizzle with olive oil to serve.
